French Potato Salad


  • 2 pounds small Yukon Gold potatoes, scrubbed and sliced into 1/4-inch rounds
  • 1/4 cup white wine vinegar
  • 1/4 cup olive oil
  • 1 tablespoon Dijon mustard
  • 1 shallot, finely chopped
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh thyme
